Super Bowl Snacks


We started with nachos. Craig grilled steak and I made fresh nacho cheese. After one disasterous attempt from Pinterest, I adjusted the recipe and came up with the best organic cheese dip yet. 

You'll need:

1.5 cups whole milk
1/2 cup + 2T heavy cream
1/4 cup butter
2T corn starch
2 cups cheese 

In a sauce pan, heat milk and cream over medium heat until frothy. In another saucepan, melt the butter. Pour the hot milk into the melted butter (slowly, everything is hot). 

Whisk together 2T cream (or milk) and 2T corn starch. Add to the hot milk and butter. Cook over heat until it has reduced and thickened (5-10 minutes, the longer you can wait, the better it is). Sprinkle in the cheese and whisk until creamy and smooth. Enjoy!
